Ο ρόλος του μαγκιόρου καζανάρη είναι πρωταγωνιστικός και καθοριστικός. Ο καζανάρης λειτουργεί συχνά σαν μάγειρας και τα «μυστικά» του καθορίζουν τη γεύση της παραδοσιακής τσικουδιάς.
Χιλιάδες μικρές λεπτομέρειες, όπως το ρύθμισμα της φωτιάς, η ποσότητα του νερού αλλά και η ποσότητα των αρωματικών, η σωστή αραίωση με νερό, το ιδανικό κόψιμο της «ουράς» και της «κεφαλής», φτιάχνουν την κάθε ιδιαίτερη συνταγή.

The role of the master distiller is central and indispensable. Much like a chef, the distiller relies on experience, intuition, and closely guarded secrets that ultimately shape the unique character and flavour of traditional Cretan tsikoudia.
Countless small details—from carefully controlling the fire, the amount of water and aromatic ingredients, to achieving the perfect dilution and knowing exactly when to separate the “heads” and the “tails” of the distillation—come together to create each distinctive recipe.
We warmly invite you to the opening of Nikos Basias exhibition at LOTOS Open Art Gallery in Sougia, where we will raise a glass together and enjoy a tasting of exceptional varieties of tsikoudia while taking in the breathtaking view of the endless blue sea.
